Some info I forgot to mention:
o starting with beta 6, languages can have key equivalents, so Plain
text is option-ctrl-shift-P
o if a bundle is disabled (in filter settings), the language from it
can will still be used, but only if there are no other (enabled)
languages that can read the file
So, a) when a file is (incorrectly) shown as markdown, you can use the
key from above to go to plain text and b) if you disable the markdown
bundle, it won't show .txt as markdown, but you'll still get the
language for files ending with .markdown.
