Is it possible to have certain "favourites" when opened via ⌘⇧O, open with a non-default theme? I'm thinking there's likely something in the .tm_properties file that might help me do this but I'm a little in the dark on where to look to figure this out.

While font and theme can be set via .tm_properties, those two settings are presently only allowed to be set globally, so you can’t assign specific themes to certain files or file types.
There is an open issue about this: https://github.com/textmate/textmate/issues/801
