I have a hard time... Why is this mailing list still on its own server instead of the much more easier google groups?

Because we're a bunch of old farts who were comfortable using mailing lists before Larry Page and Sergey Brin were out of high school? That's my excuse, anyway.
Seriously, I've never been a big fan of Google Groups. I've always thought it was the bastard love-child of mailing lists and Usenet news, and not doing a great job at either of them. It's only "more easier" if that's what you're already used to.
Mind you, I have nothing to do with the TextMate list except as a happy subscriber. Calcified and set in my ways, but happy.
So would you bunch of old farts :) tell me where I can change this to digest? :-) the youngster Googler can't find its way.

At the bottom of every message is a link to http://lists.macromates.com/listinfo/textmate. Go there. Scroll to the bottom. Enter your email address and click "Unsubscribe or edit options". Enter your password. Scroll down to "Set Digest Mode" and set it to "On". Click "Submit my changes."
And get off my lawn! :-)
nope. when I login I end up at http://lists.macromates.com/roster/textmate and there's no "set digest mode" there.
I was so far as to reach this login thingy :)
ps: I'm still on your lawn, find a way to get me off ;-)

It should have taken you to this page: http://lists.macromates.com/options/textmate
Are you sure you didn't hit the “Visit Subscriber List” button accidentally?

You clicked the wrong button. There are three text input boxes down there. Two are labeled "Address" and "Password" and are next to a button that says "Visit Subscriber List". That's the one you hit. The third box doesn't have a label, and is next to a button that says "Unsubscribe or edit options". THAT'S the one you want. Heck, you don't even need to put in your address. Just click the button and you'll be prompted for it on the next page.
I'll grant you that not labeling the third text box is a bit confusing. When asked for your address it's natural to put it into the field marked "Address". Later versions of the list management software (Mailman) fix this. The "Unsubscribe or edit Options" box and button get moved into their own section of the page, near the top, so that it's very clear which text field goes with which button.
OK guys,
on one side I feel very dumb, for having clicked the wrong button,
on the other side, yes, this webpage with the non labelled text box and 3000 different buttons is probably the worst web page in the world... Even Google has a better UI ;-) That's a lot said :)
In any case, thanks you all for helping me :)
Cheers.
