I suspect there are character set issues with the digest, and most
likely you are using a text digest - which means that the rather
brain-dead digester can't work out how to mix the various character
sets in use.
Try going to

In the grey options boxes, the third option is
"Get MIME or Plain Text Digests?"
Set that to MIME and see if things get better for you.
If that doesn't work then you will have to change to non-digest delivery.
If *that* doesn't work, your email system is terminally broken (stripping
all 8 bit characters).
