I just got a great tip from a friend of mine.
in the inclusions, I just add the option [pdftex] infront of graphicsx and suddenly the image inclusions works ;)

It may be that the texMate command is finding an included package that makes it want to run latex rather than pdflatex. You may also want to double check your preferences and make sure that you have pdflatex selected.
