The reason nib files are not search is because the extension is listed in Preferences → Projects → Non-text files.
To include these files in searches, you should remove the extension from there. This will also make them selectable via ⌘T etc. if this is undesired, you can setup specific exclude patterns for the file chooser via ~/.tm_properties.
