Hi
With the new version, I lost the choice of LaTeX language
Now I get a character like a diamond on the screen

What keymap?
I use a french keymap
What is shown if you press ⌃⇧⌥L in the ⌃⌘T dialog (switch to key equivalent search)?
code 0C
I wrote a diamond but it's an invisible character. With a hex edit program, I can see 0C for the code of this character

The problem is that on a French keymap ⌥⇧L produce the pipe character. Since this is ASCII TextMate will (now) treat the key sequence as a pipe character (without the shift and option modifier keys).
For now I suggest you rebind the LaTeX grammar to ⌃|.
The only workaround I can think of is to test multiple interpretations of the key sequence agaist the bindings, this seems to be what the menu items do.
