I'm running 1.1b5 at the moment, but I'd like to try out the unofficial betas (I believe 1.1b12 is the latest?).
How can I do that?

Once you install that beta, go to the software update from the preferences, and tell it to search for betas. Then it will download the next one for you. Also check: http://macromates.com/wiki/pmwiki?n=Main.Version1Dot1Beta6
NOTE however, that you will need to install svn and do a checkout of the bundles. Instructions in: http://macromates.com/wiki/pmwiki?n=Main.SubversionCheckout

Just for the records, 1.1b12 comes with these bundles:
C, CSS, Defaults, Diff, HTML, Language Definition, LaTeX, Markdown, Math, Objective-C, PHP, PropertyList, Ruby, Source, SQL, Subversion, Text Utilities, TODO, UnixShell, Web Searches, and XML.
So it's no longer strictly necessary to do a svn checkout. But if you need other bundles than what's in the above list, then you do.
