For example, I would like to do this:
windowTitle = "$TM_DISPLAYNAME – ${TM_DIRECTORY/$TM_PROJECT_DIRECTORY//g}"
where the string in TM_PROJECT_DIRECTORY is being removed from the string in TM_DIRECTORY

Seems I found a bug in the LaTeX Bundle:
Im using the watch command for editiing LaTeX files quite regularly, but when being executed in TM2 the dialog window appears to hang. The live rendering process works, but even when skim and TM2 are closed the dialog box stays forever. (Apparently it's the process "cocoadialog". )
maybe someone can look into that. thx
Is that LaTeX-Bundle still under development or not?

Not presently possible, but on my own wish-list as well.
