Would it be possible to automatically add a \item line to the begin-> snippet, that only appears when the environment is a enumerate, itemize etc?

Done, except for that fact that it only produces "\item" for description. I couldn't get it to produce the ideal [$2].

Nice! Is it possible to change the new line command to include the "got to EOL" before adding the new line? Or maybe as alt-enter?

This already exists, bound by convention to cmd+return. Unless you mean the "new item" command, in which case there is none yet, though one can easily write a macro that goes to EOL and then runs the command, and that should probably be bound to cmd+enter.
