After reading about various wiki's (and trying a few) I ended up choosing PmWiki as suggested by Fred.
The new Wiki URL is: http://macromates.com/wiki/pmwiki
It has a link to a static HTML version of the old wiki before the accident including all the textile pages. The textile pages are up-to-date, but the HTML export was done the 12th December, so edits after the 12th of December are not in the HTML version.
I haven't imported the textile pages into PmWiki, since they'd have to be converted, and I'm not sure how easy I can automate this process.
So I'm thinking that maybe I should just leave the static pages and import them manually over time (as they are needed), which also allow for some restructuring of the wiki, which I think was probably overdue (break down most of the big pages and create a better structure).
I'm really terrible sorry about this, and I hope that it's not viewed as lack of appreciation for the many contributors -- I really do appreciate the work that has been put into the wiki!
With this new wiki it also means that I can and will take an active role maintaining the software side of things (which I previously thought I'd outsourced, but let's not point any fingers here... ;) ).

That *blasphemy* coming from the creator of the missing editor for OS X which should be able to automate any task dealing with text! ;-)
But seriously, just make it available and if people want to edit it, they can import the old version, rewrite it a bit and insert it in the new wiki. And if it's not important, it's not imported :)

I'm glad you're taking this attitude! :)
And actually, something good may come out of this. I've made a Bundles page where each bundle should have its own sub-page following the template that I've put up as Bundles/Example, using this template should allow me to do automated extraction of bundles for inclusion with new versions and/or the system requested similar to QuickSilver plugins.
So everyone who has a bundle and wish to make it public, please spend a few minutes using the template I've supplied. I can also allow upload to the wiki, so people don't have to host their bundles themselves -- I'll enable this in a moment -- and feedback to the template is welcome but should preferably be sent sooner rather than later ;)
I'm still playing with the wiki to get a feel for the capabilities, so there'll probably be a lot of changes during the next few hours... ;)
I've also done a dedicated Users page. Generally I'm trying to make it more hierarchical than the previous wiki. Also splitting up requests (which I named suggestions ;) ) into GUI, project management, and actual text editing.

I've converted the howtos and faq page and I must say that the new wiki is not entirely intuitive, but I managed in the end. Although I have not really found a proper way to do code boxes. I settled for the solution I have now.
The most annoying thing I found for this wiki thing is that there is not really a good overview of things you run into when editing wiki pages. For instance: I had a hard time figuring out how to use anchors and in the end, there was a small error in the original documentation on the PMWiki website (which is somewhat newer than the version which is included in the wiki at macromates).
Anyway, those pages are up for grabs now, if someone feels he can do better, he can edit it. That's what it's a wiki for :)

Something which is probably not obvious is that this wiki uses groups. So what looks like a hierarchical link, e.g. “Suggestions / GUI” or “Bundles / ObjectiveC” is actually the GUI/ObjectiveC page in the Suggestions/Bundles group. If the page name is not prefixed with a group, it uses the current group.
So there is not arbitrary nesting, and it's important to prefix the links in the sidebar (since these will appear in all group contexts).

Yes, I can't find any markup for code either. But one can define new styles both locally, for groups and globally (as administrator). I'll look into this tomorrow and add a style or new markup for code blocks.

I'm glad my suggestion suited you. Don't hesitate to ask the community of pmWiki, or even PM himself for any help, they're all responding and helpful. I won't be surprised if somebody there already made a script to do that.
You can adapt pmWiki a lot to your needs, there's many modules you can add (in cookbook).
If I can help to transfer things from the old wiki, or anything else, don't hesitate to ask. In fact, I imported a lot of things back and forth between Instiki and pmWiki, and it's not that hard to do. Don't forget you can use html in pwWiki, that might be a good temporary solution.
