I was thinking of making a screencast that shows off a bundle i wrote.
When I tried to test out some sample content and posted it to YouTube and Google Video it looked like absolute crap.
I seem to recall that allan posted a guide on how he made the 'casts somewhere in the wiki, but i can't find it.
If anyone has tips and tricks using snapz-x pro or a HOWTO please let me know.

I wouldn't upload it to YouTube/Google Video as they degrade the content, try vimeo or blip.tv - they provide better quality.

I've been using JumpCut for mine, and it works out really well. They provide some tools you can cut out sections with, which is handy if you don't have video editing tools.

What I do is:
(1) In snapz pro, make the movie in short segments ("scenes") saving to Apple Intermediate Codec.
(2) Drag each movie into a Keynote slide. Yes, Keynote! Apple's secret movie editor.
(3) "Edit" the whole thing in Keynote. If a slide contains a movie, the movie plays. If a slide contains a sound file, the sound plays. If both, both. (Thus I can do the visuals and the narration separately if desired.) Transitions and builds work. Keynote lets you "top-and-tail" movies and sound files so if the beginning or end is bad you can just expunge it.
(4) When finished, export as Apple Intermediate Codec again.
(5) Now use QuickTime Pro (or, if you are a cheapskate like me, QTAmateur) to compress. Good example settings are:
H 264, 12 fps, data rate restricted to 150kbits/sec, Best quality (multipass), reducing from the original size somewhat; along with sound MP4, AAC 40 bits at Best encoder rate.
No need to host on YouTube; just stick it up anywhere, e.g. on your own site. It will "stream" just fine, i.e. the download speed is faster than the playing speed. Example:

I could recommand you a little nice tool "keycastr" which is showing what keys you are pressing while shooting your screencast. http://www.versiontracker.com/dyn/moreinfo/macosx/31054
all key-combinations will appear in a nice and floating little "smoke-styled" box.
your audience will always see what actions in textmate you are doing... you can concentrate on the narration.
maybe also worth a try:
- ScreenFlow http://www.varasoftware.com/products/screenflow/
- Screenflick http://www.araelium.com/screenflick/
Both are specialiced Screencast-Apps which promise to be as twice as fast as SnapzPro is.
YAlso you wont have too much struggle cropping/sizing/converting/encoding the video before upload. Both to be comprehended as Screencast-Suites with "everthing you need" including easy editing of the clip.
I myself wished as beginner for exactly what you have suggested: more screencasts!

I just realised that ScreenFlow must have a new version out with a lot of interesting features. Completely based on Leopard taking advantage of its 'core' technologies.
Dont miss their own screencast section of the website explaining the software.
seems very nice, more handy than snapz pro at the same price (29 US$) ...

As others have noted, your problem is (likely) that the two video services present a downsampled version of your movie.
