Well, the UUID of the Theme surely changes between launches.
The Theme file is this: http://www.infocraft.com/articles/ switching_to_textmate/BBEdit.tmTheme
Downloaded with Safari and renamed from BBEdit.tmTheme.txt to BBEdit.tmTheme
I just opened it in BBEdit and can't find anything wrong - should I try trash the pref's file for TM?

It sounds like it.
Here's how I do it:
- Doubble-click the Theme file in the Finder -> opens it in
TextMate and activates it..
- Quit TM = It's gone from the Theme selector in Prefs, but still
in my AppSupport folder...

The selected theme is recorded in the defaults, after quitting TextMate, try:
defaults read com.macromates.textmate OakThemeManagerSelectedTheme
This shows the UUID of the theme which is selected. However, if the theme is _gone_ from the Fonts & Colors preferences when you restart TextMate, it would indicate that likely TextMate has problems loading the theme during launch.
Try to run Console (in /Applications/Utilities) to see if there should be an error message from TextMate.
