Also, how do I change the Select Enclosing Brackets menu command to be ⌘B - I keep on getting some whistle when I forget that the default is ⇧⌘B.
You can select Bundles → Bundle Editor → Show Bundle Editor and then from Filter List… disable the Xcode bundle, which is the one that does Build on ⌘B.
Markup languages (HTML, Markdown, Textile, BBCode, LaTeX, etc.) uses ⌘B for Bold, so you may still want to keep it for that.
