Ok, bundles installed manually in TM2  should go in:

~/Library/Application\ Support/Avian/Bundles (see here
http://blog.macromates.com/2011/locating-bundles/).

... so this might be your problem at the moment.  Once this is done, you
should be able to see the LaTeX bundle in the bundle editor of TM2.
