You can find something similar in a Dashboard widget, such as my  
Symbols widget:

It's not as good as TeXShop's LaTeX Panel, since it doesn't have  
nearly as many symbols, but it's quite easy to add them yourself, and  
I will accept suggestions/patches. It also has special support for  
TextMate; see the info menu on the reverse side of the widget.
