Oh…

You can easily hide them from the project drawer, there is a “File  
Pattern” option under the Folder References tab in the Advanced pane  
in TextMate's preferences.  It is already a negative match (things  
*not* matching appear in the drawer), so you can just add the file  
extensions you want to hide at the end of the rule.  There is a  
similar thing per-project, you bring up the dialog by deselecting all  
files in the drawer and clicking on the little “info” button.
