In  any case, Preview will certainly not support pdfsync. ASAIK  
texniscope is the only external viewer right now that supports it.

To the OP, the name you need to set the variable to if I recall  
correctly is the name of the executable. So it is “texniscope”   
because the application is called Texniscope.app, and similarly it's  
“preview” because the application is Preview.app. So you could try  
some similar variation with Adobe Reader.
