I'm curious if there is any practical reason why having
character-by-character Undo is actually useful. After all, I can just hit
the Backspace key, right?

It's only when the one character replaces a selection that Backspace
doesn't work at *least* as well as a character-by-character Undo. But a
character-replacing-selection would be considered a block, and so block
Undo would work fine.
