MacTeX is a distribution that is based on TeX Live (actually it is TeX
Live but w/ OS X-compatible binaries) and pdfTeX is the actual program
you are using. Consider XeTeX if you want to use UTF-8.

As I wrote before: OS X TeX (or MacOSX-TeX) should be your list of
choice but it is pretty high traffic (which is good again if you have
a question because you usually get fast answers):
