Not having looked at the document, but LaTeX only has limited
mappings of non-ASCII characters to its own font system, thus even
with UTF-8, you’ll find that you can’t use much unicode with latex.
But switching to xetex/xelatex will improve that significantly, since
it uses the font (and layout) system of OS X.
