[TxMt] Mail language scope

Naive question: Why use stars when you can have italic and bold? I'd
rather use TextMate, but would prefer not to give up my HTML mail. Is
there some happy middle-ground I'm missing? (Or is Apple Mail the
wrong tool for the job?)
