I would strongly prefer to have both at my disposal all the time.

In many cases I find the non-chunked undo acceptable or even  
preferable, but sometime I want to roll back a few hundred characters  
(or about 10 chunks :D).

So my vote is for adding the Option modifier for chunk undo (Cmd+Opt 
+Z/Cmd+Opt+Shift+Z). And probably some way to specify the desired  
default (chunked or textmate).
