Sorry, this key is mentioned in the manual as a “convention” key:

  • Convert to «Something» (⌃⇧H) — convert the document to  
something which makes sense, e.g. for HTML run it through tidy, for  
Markdown, convert it to HTML, for an XML property list, convert it to  
the more readable ASCII version, etc. Generally this is done in- 
place, overwriting the current document.
