In the Bundle Editor, in the LaTeX bundle, you can find a Preferences
item called “Miscellaneous”. Inside that, the “smartTypingPairs”
property for LaTeX is redefined to include the $ sign, along with the
usual suspects. That's where this particular behaviour comes from.
