Hmm, I could be wrong, but I actually thought that this is meant by "Automatic by Language", ie an App spell checks a doc due to the set OS env language.
Because I do not think that the Mac OX parses each word/line/sentence in order to guess what language is currently used.

The only thing which I couldn't find in SL is the option "Multi-Language" which I often used.
