Sorry, coming into this kind of late (my file server got killed by  
lightning... Twice!!!). Note that you can overwrite 'Save' (eg Cmd-S)  
with your own command. So it would be quite possible to use some kind  
of VCS to do something time-machine like. Not  quite what you were  
looking for, but quite do-able with similar results.
