I added another rule to LaTeX which catches \(ws|EOL), it names the match for “dummy.escape” and that allows to get back a normal quote on the "-key, when the previous character is an escape (and the caret is either at end-of-line or in front of a whitespace).

So if you (literally) type »a "test« you get »a ``test''« (press tab to skip ''). But typing »a \"test« gives just that, »a \"test«.
